This works with other herbs, too! Freezing other things (rosemary, etc) in olive oil or chicken broth and keeping them on hand keeps those from going bad and makes it easy to just grab one from the freezer. For extra fun, use a shaped ice cube tray. Like robots or dinosaurs or brains! 😀

@ellisrobertson: agree! actually even without the oil you can freeze the leaves and they crumble (like dried, but taste fresh) which makes them very useful.
