Freezable cookies

    Hi Hive! I had no idea how many people would PM me for recepies for freezable cookies!!

    I only have one with me now, I'll get the rest tonight.

    Step one- do not ever tell your FI that there are frozen cookies in your house. Label them "asperagus casserole" in the freezer or something.

    Secret Chocolate Chip Cookies

     

    Whisk together

    1 1/2 C Flour

    1/2 t baking soda

     

    Cream Together

    8T butter (no margarine!)

    1/2 C White Sugar

    1/2 C Brown Sugar

     

    Add and beat until well combined:

    1 egg

    3/4 t salt

    1-2 T Vanilla*

     

    Add the flour mixture

    when all combined add

    1C semi sweet chocolate chips

    1/2 C milk chocolate chips

    1/2 C Walnuts

     

    Bake at 350 for ~8 minutes until golden brown.**

     

    Enjoy!

     

    * Neilsen-Massey Vanilla Bean Paste. It is amazing. They sell it at Sur La table. . It changes recipes!

    ** With a medium cookie scoop (for a smaller cookie scoop or a spoon check after 6-7 minutes.

    oh also these.

    APPLE PIE COOKIES:


    Preheat oven to 375

    Cream together:

    3/4 C butter
    1C packed Brown Sugar

    Add:
    1 egg

    mix until smooth. Add:
    1t Cinnamon
    1/2 t nutmeg (fresh is much much better, you can grate it on a cheese grater)
    dash of vanilla
    1/4 t salt

    add slowly
    2 1/2 C flour
    if the dough is sticky add 1/2 C more flour

    Dice
     1 granny smith apple (~1C)
    so the pieces are the size of mini chocolate chips
    mix in

    Place 1" balls ~1" apart on a cookie sheet
    Bake at 375 for 10 minutes

    They won't flatten out but they will be moister this way!

    Glaze with 1/2 Cup Icing sugar mixed with a 3-4 Tbsp of water
