I think that a heartfelt thank you card would be a wonderful gift for a dear friend.
My officiant is actually my cousin, so I went with a more personal gift. We're giving him an engraved flask.
I'm shamelessly bumping this, in the hopes of getting more ideas...
I made all the gifts for my wedding (pottery student) but I think any heartfelt gift would be much appreciated. I think a gift card would be totally appropriate for a friend doing you guys such a big and meaningful favor. Maybe $50 at his favorite restaurant? Or store? Or a handmade item he would like? A case of microbrews? He's probably not really expecting anything is this is not a regular thing for him, so we would probably appreciate whatever you have to give. Hope that helps!
We also have a friend getting ordained to be our officiant. Since she's so close, we're looking for something personal. She's really into Harry Potter so we've been keeping an eye out for something along that theme and she's in to fashion so we might get her a gift card to her favorite clothing store. I've been keeping an eye out on her FB to see if she posts something she wants as well. And she's just graduating college so we might get her a lunch box for work and fill it with something. You get the idea...

One of my good friends is going to be our officiant. He was ordained by the Universal Life Church (the online thing some people use) and is unaffiliated with any physical church, so a donation to the church isn't an option. I want to give him something, since he's helped me with writing the ceremony and is an awesome person, but I have no idea what to get him. (He's also extraordinarily difficult to shop for.) If you are in a similar situation, what did you do?
