My FSIL is a stylist and is doing all our hair...i'm gifting her a massage gift certificate! Even though it's a gift card, it's the last thing people tend to buy for themselves.
I think you and your FH should set a price point for each gift and then give according to the person -- since every player you mentioned is doing something unique to them.

We're incredibly lucky people to have such a network of talented friends that have offered their talents to us for the day.
I'm trying to come up with an appropriate way to say thank you. Some of them offered it as a gift to us, others we asked to play a special role. Any ideas?

Guitarist for ceremony - we asked him to be part of our day
Phootgrapher - they offered as their gift
Videographer - he offered as his gift
Vocalist for ceremony -we asked her to be a part of our day
And another friend who has brewed beer for our reception - he offered, we're paying for the supplies.
