My Mom has been gluten free for probably 10 years or so now and she has a bread maker and uses "Gluten Free Pantry" bread mix.  Also...it tastes better when it is toasted.  (When she packs lunch she toasts her bread even though it's going to be hours before she eats it).  Progresso has now made a lot of their soups gluten free which is great also.  The betty crocker cake and chocolate chip cookie mix is pretty good.  Once you are used to eating a gluten free diet you won't even know the difference anymore. I'm not gluten-intolerant but my husband is, so most of my cooking is gluten-free.  I find myself using recipes from The Gluten-Free Goddess a great deal.

We pretty much try to avoid "fake food" (that is, gluten-y items re-engineered to be gluten-free), but we do mostly whole-food cooking anyway.  In terms of packaged stuff, labels are getting much better at mentioning when the food is gluten- or wheat-free.
