Go-to pot luck recipe

    We're going to a pot luck and I'm looking for some ideas.  I usually bring cakes to these types of things, but everyone was asked to bring a side dish.  (meat and desert are provided)  What are some of your favorite dishes to bring to pot lucks?  Do you have a dish that is a crowd favorite?

    I always like to bring an enchilada casserole since it is easy and usually Mexican food makes people happy.

    Hmmm, that depends on the season.  During the summer, my mom's tomato salad (balsamic, garlic, onions, etc.) is always REALLY popular!

    polynesian meatballs. meatballs, pineapple chunks, pineapple juice, cornstarch, and brown sugar.

    Ok so guess what? My answer is the same as Tessabella! I looooove my Au Gratin potatoes ... they're lethal. Everyone dies for them. My mil mexican dip ... which I wish I could master is a huge crowd pleaser.

    As a side, I like a napa salad. Napa cabbage, green onions, topped with ramen/almonds or peanuts/sesame seeds (all toasted with a little butter) and a dressing made of oil, vinegar, sugar, and a little soy sauce. Yum!!

    @MHR-it's very simple. An 8 oz package of softened cream cheese, an 8 oz container of sour cream, and a package of taco seasoning. Mix it all together with a mixer and then spread it in your dish and layer green onions, tomato's, black olives, and whatever shredded cheese you like on top.

    LOL, Tessabella, that is the same taco dip recipe I was going to add- love it!  I always hope for leftovers and rarely have them.

    Black Bean and Goat Cheese Dip, Mexican Layer Dip or a Veggie Tray with Buttermik Peppercorn dip. I'm making the later on Thursday for Parent's Night at the little one's school.

    Mmmmmmmmm mac-n-cheese.....with the crunchy good crust....

    Good thing I'm off the the gym soon or I'd gain weight just reading this thread... Wink

     

    As for me I usually make a green salad with bleu cheese, candied walnuts and dried cranberries...you know, those salads that are more fattening than, say, a cheeseburger?  Laughing   Wink

    I usually bring dessert: red velvet whoopie pies.  If it's a side: mac and cheese.  Mmm...

    I usually bring a pasta salad with veggies, or a mixed bean/veggie salad marinating in some kind of dressing.  A little dull, but cold salads hold up well over time and can sit at room temperature for awhile.

    I'm a huge fan of tabouleh with couscous and fresh mint. Also, I just made a beet and tahini dip with fresh veggies that is to die for! (assuming you like beets!)

    My family calls it Ambrosia Salad, but I don't know, I've heard a lot of names.

    Mandarin oranges, pineapple, halved grapes, mini marshmallows, and cool whip mixed with french vanilla pudding mix.

    Ok, go to dish, my secret amazing Mac and Cheese. It's super duper easy.

    You will need a party sized Stouffers Mac and Cheese, 1 bag shredded sharp cheddar, 2/3 a sleeve of Ritz Crackers, and a splash of milk

    Cook the mac and cheese as directed. About 10 minutes before it is done pull out of the oven. Crush the Ritz crackers and mix in until you can't tell they are in there. Mix in about 3/4 of the cheese and enough milk to make it real gooey. Then put back in the oven for another 10-15 minutes. Once you transfer it to a serving dish (your secret that it was ready made stouffers!!!!) sprinkle on the remaining shredded cheese.

    Seriously, best mac and cheese ever. I've never had someone tell me it's not the best they've ever had. Gooey, creamy, cheesy, salty, EVERYTHING. YUM.

    My mom makes this salad that is an insane crowd pleaser! It's romaine lettuce, then a dressing with crushed raw ramen noodles, slivered almonds, and a few other crunchy bits. The dressing is made with soy sauce, brown sugar, and maybe peanut butter? It's sooooooooo yummy.
