A traditional Bellini is made with peach purée. When you mix in such a sweet element, the sparking wine flavor will not be as prevalent. Save some money and choose a less pricey one. Nobody will care but you.

I definitely agree with @Lola-Poodle. You’d have to work pretty hard to find a Prosecco that wouldn’t be perfectly nice in a Bellini (or Mimosa, or Kir Royale, or French 75, etc, etc).

How about this: buy a bottle of the cheapest Prosecco at your local wine store. Make a Bellini with it. If you like it, you win! Otherwise, either work through the available options, or organize a Bellini-off with some friends and a few candidate bottles.
