@jen_jen: Hey, i'm only 45 minutes from you! The Royal York Hotel (I think that's what it's called) looks very romantic. Expensive, but romantic. I've always wanted to spend at least one night there.
Other than that one, I'm not sure of any other hotels in the area.
What about Ste Anne's Spa? It's an hour from Oshawa (but in the opposite direction of Toronto). I've never stayed there, but it's the best reviewed hotel in Ontario on tripadvisor.

I don't know if you use tripadvisor, but I find it to be very useful.

Any suggestions on a romantic place to stay in the GTA within an hour or so of Oshawa (Toronto is fine but I dont know ...a lot of the hotels just look generic, even places like the Royal York which have amazing common areas and boring rooms).
