I haven't tried it, but Google Docs now has a bunch of templates to help with wedding planning, including a guest list spreadsheet template. I think you can even have guests fill in their own details using this, although again, I haven't used it so I'm not too sure:

I am using an excel spreadsheet. I found that it's the easiest to keep track of.

I started out with using theknot.com.  Its not hard to use, the info is organized in a way that works for me but it is sooooo slow, and sometimes it just ignores me... seriously, I'll press edit and nothing will happen.  Then I have to sign out and sign back in, its useless if you don't have the time to mess with it, and who does?  I am interested to see what other programs are commonly used.

I'm using a Google Docs spreadsheet so the FI can also add to it.  =)

I put mine in Word set up as labels because I printed out labels for the STDs and RSVP envelopes. This was great because then I emailed my mother the listing so she could use for the shower. We both use this list for holiday cards and she will be using this list for my baby shower invites as well.

My guestlist is in excel. I found this the easiest way to do it.

If you do use an online tool, I would make sure that you export it to excel. My guestlist used to be on marthstewartweddings.com and then it completely dissapeared so I had to start all over again in excel!

I've got a Google doc spreadsheet that I shared with FI and FFIL so that we can fill in the info as we get it. Once we're done I'll export it to excel and do a mail merge for our labels... unless I cave in to handwritten calligraphy!

There's an amazing new website called Postable that gathers all of the addresses for you and then you can export as excel or print labels. it's pretty awesome and it's free http://www.postable.com
