Can't tell you a whole lot, but my friend went for her Honeymoon and LOVED it!
I researched it a little for mine and the one drawback is that the roads between Huatulco and Oaxaca are not safe to drive so you have to pick one place or the other...
one of my besties is doing some grad work in mexico right now (as is her man friend) and for her birthday two weeks ago he took her to oaxaca. She loved it. she also blogs so this might be helpful:
I was there a couple years ago (my brother got married there) it is awesome!!! My fiance wants to go there for our honeymoon, but i am trying to convince him to try something different (just for the sake of going somewhere new)
I went in early Nov and the weather was perfect, i don't think it rained once (i was there for 9 days). The resort (las brisas) was gorgeous - set up on a hill and each room as an ocean view. it wasn't over run with american and canadian tourists (no offense anyone - i am one of those too!) although there were lots there, there were also plenty of mexicans at the resort, expecially on the weekend - which I appreciated because it made it feel more authentic even though we were in an all inclusive.
it's definitely not a party resort, but if you are looking for a relaxing time at a beautiful place, definitely a good choice.
We booked a couple day trips, one to puerto escondito (surf town) the waves are massive and there was a surf competition on when we were there. On the way back the driver took a detour and took us to a secluded beach for the sunset, they had a turtle conservation area there and my some luck baby turtles had just hatched (like hours earlier) we each got to take one and release it into the ocean - it was so cool!
We did another day trip out to the various bays, we went snorkelling and went to a small local beach.
There is a small town which we went shopping in for souveniors and my brother took his groomsmen on a fishing outing one day as well. There were other outings available to be booked as well, but those are the ones we did.

i have been there too and like futuremrs.m stayed at las brisas, which is beautiful. it's definitely a quieter experience, when it comes to resort towns, but perfect if you want lots of privacy and be away from the really touristy locations. there is lots of potential for day trips, if you want to get out & explore. i have traveled all over the state of Oaxaca -- private message me for info or ideas!
