I made (most of) mine, iced it and my wedding planner assembled it on the day. Making the two fruitcake tiers took about 10 hours, the chocolate tiers about 5 hours and my mum spent a good 4 hours on white chocolate and madeira. Then icing it all took at least 10-12 hours.

It was big enough to serve 400 though!

@BuffaloDots:  My mom and I have made cakes for a couple of my friends weddings (my Mom has probably made about 30 cakes for various people over the course of 15-20 years).  Definitely bake the cakes ahead of time, wrap them TIGHTLY in plastic wrap and put them in the freezer 1-5 days ahead of time.  It makes them WAY easier the trim down, assemble, crumb coat and frost (and they’re much more moist!).  If you did that ahead of time you just need a day or so (maybe less depending on how used to baking/frosting/decorating you are) to trim, stack and crumb coat them, put them in the fridge for atleast an hour or so and then you can take them out, frost them and stack the tiers.  Then it depends on how much decorating you’ll be doing on them.  Sorry if this has been long/confusing but hope I helped!  Good luck!  🙂

@BuffaloDots:  A three tier cake for 100 would take an awful lot less time, but still I’d budget at least 12 hours over 3-4 days.

I made my own cake, but it wasn’t a traditional wedding cake.

I baked the cakes one day (took a couple hours just because of lack of oven space).

I iced them one morning and probably spent 4-5 hours on that. After the first one (that took close to 2 hours) I got the hang of it quicker.
