Ok! Was I dreaming it or did it say sexual dinner at first? LMAO! I'm thinking "What the heck is a sexual dinner?" LOL!
Does he have any preferences? Seafood? Chicken? Red meat?
One of my favorite easy/delicious recipes is actually pretty healthy too--a crustless spinach, onion, and feta quiche, with a salad on the side. I substitute 4-5 egg whites for the egg beaters that the recipe calls for, and add whatever vegetables, herbs, or cheese I feel like using. I'm a big fan of mushrooms and green peppers added to the recipe, but I'm sure you could throw some bacon or sausage in there and make it extra tasty.

Ok, I'll share my fave summer salad:
Cherry tomatoes
Black pitted olives
Boccoccini pearls (cheese found at any grocer)
FRESH basil (fresh is key)
Your fave small shaped pasta
Slice the tomatoes and olives in half and pick apart the basil into smaller pieces. Just throw the pearls in as they are tiny. Boil the pasta.
The dressing is just olive oil, bit of salt and pepper, oregano (dried stuff) and red wine vinegar but not too much vinegar or you will overpower all the other flavors (plus it has to be RED wine vinegar)!
Hubby loves it and it's simple and yummy. Great starter. You can also skip the pasta for a more "elegant" look and flair.
I just made a moracan stuffed pork tenderloin that went over really well! It was super tasty and easy, but look fancy because its rolled.

Here's another easy one that he loves...Creamy Italian Chicken. I think I originally found it on sparkrecipes.com
Ingredients
4 boneless, skinless chicken breasts (could have used a few more, though)
1 pkg Italian dressing mix
1 cup water
1 8 oz. package low fat cream cheese (the original poster noted that you *could* use fat-free, but low fat gives a better flavor)
1 can 98% fat free cream of chicken soup
angel hair pasta (original poster suggested rice...and I was lazy.)
Directions
Place chicken in crock pot. Mix together Italian dressing mix and water. Pour over chicken. Cover and cook on high for 4 hours OR low for 8 hours.
Mix together cream cheese and soup in separate bowl. Carefully remove chicken from crock pot to plate. Pour cream cheese/soup mixture into crock pot and mix together with dressing in bottom. Return chicken to crock pot and mix gently to shred the chicken. Cook on LOW until heated through.
I would suggest the following. They are bit 'exotic' maybe but this is what I usually make:
Butter chicken with roti
Coconut chicken with pulao rice (<-- this is MY fave!)
Tandoori chicken (dry) as a side
Chicken biryani
Stir fry chicken and veggie noodles. Hakka style (with Indian spices that is....)
* As you can tell, I like chicken.
I am a chickaholic and well on my way to a Chickens Annonymous club.
I do my mother's old recipe for "fake" chicken parm whenever I want a special meal.
1. Pound boneless skinless chicken breasts to about 1/2" thick
2. Dip each breast into a plate with 1-2 beaten eggs, then dip in Italian seasoned bread crumbs to coat
3. Fry each chicken breast in a little bit of oil until browned
4. Put the chicken in a baking dish. Cover each breast with a handful of shredded mozzarella and some parmesan cheese. Pour a whole jar of tomato sauce over the chicken. Sprinkle more cheese on the top.
5. Bake at 350 degrees for about 45 minutes, or until chicken is thoroughly cooked and sauce is piping hot. I like to uncover it for the last 10 minutes or so, so that the cheese will brown a bit.
I like this dish because it is so easy, with such a payoff! I just do a bagged ceasar salad on the side, and some spaghetti or fettucini. The worst thing to do, in my opinion, is make something too fancy when you want a special meal. You end up too tired to enjoy it, and with a ton of dishes in the kitchen to clean up.

I want to make FI a special dinner, but I am in need of ideas and inspiration, so what are some of your favorite special dinners? Luckily FI isn't picky at all :) I have 2 weeks vacation and feel like trying on Suzy Homemaker shoes. TIA!
