I think as long as you tie things together anad have a running theme throughout just about anything you choose will be fine. I too have sage green for my primary color (I am going the hydrangea route too, both green and lavendar) but I am using lavendar as an accent color. My groom is wearing a summer weight wool suit in a mocha-ish brown with an ivory shirt and a beautiful Perry Ellis tie that has shades of green (matches girls dress perfectly!)...the boys (they truly are our boys...it's a second wedding for each) are wearing the same color pants as groom with ivory shirts that have some brown stiching on them...hard to explain but they are very nice..no tie (our girls are wearing sage green halter tea length dresses..my dress is ivory/champagne...so basically my colors are sage green, browns, ivory/champagne with lavendar as an accent color. We are getting married outside in the summer at a winery so I wanted lighter shades of winery colors (lavendar, not burgandy, lighter brown, not dark brown, etc). Personally, I think if you are using sage for your primary color, any shade of any color that is a natural color (such as green) will look nice.
I am totally in love with that inspiration board from snippet and ink. It made me want to change from a fall wedding to a spring one! But this is about you, not me....I think the idea of the GM in sage sweater vests and the BMs in grey would definitely look great, particularly with some green hydrangeas. One idea if you want to try to coordinate your attendents more would be to have they guys wear grey tuxes that match the gals dresses. But that might be too matchy, and what I love about the inital board is that there are a ton of colors that coordinate instead of match. And it all comes together. By the way, I can totally see your first inspiration--that beautiful bouquet--going with the Snippet and Ink Board. You should definitely bring in some of the soft orange through floral or other accent elements. Good luck!

I just have to say I love the sweater vests...don't change them! I actually think the original green dresses next to the groomsmen really wouldn't look bad. I don't think they have to match exactly and it's nice the girl's dresses are a little richer. But the snippet/ink route wouldn't look bad either.

So I wanted a certain look for the groomsmen like below (pic from www.whitelilacinc.com):
My main color is sage green. I was going to do green, black & white, just like Miss Sundae. I wanted BMs to wear green dresses. I found green sweater vests for the guys on clearance! And they match my paper perfectly...but the green for the girls dresses is too dark.
the bottom left fabric swatch was going to be BMs dress color (Siri style Harvard; this is the dress the girls and i want). The difference in shades don't bother me too much, but I'm not 100% happy with it.
Then i found this inspiration board below on www.snippetandink.blogspot.com (gray, yellow, white, orange, green), and I love the colors together! I originally was trying to do sage and pale orange (orange as an accent color...as in the flowers), but I didn't know how to dress the guys. To which I turned to sage, black & white, b/c it was so much easier.
But i still love the groomsmen look pictured up top, and i want to keep the vests. So I was thinking of changing the color of the BMs dress to a light gray (which the BMs dress does come in). This way I don't have to worry so much about matching perfectly. I imagine my girls holding sage green hydrangea for bouquets...to keep with my green theme...b/c this eager beaver bride already bought her paper =P. I think gray is totally rewearable afterwards as well.
My question: Light gray dress on BMs and green vests on the guys (with long-sleeve white collared shirts, black tie)...would that look good together? Thank you for your opinions ladies!
