You could do a crostini with roasted red peppers and cream chesse.  Just slice up a loaf of french bread, lighly oil it and toast it under the broiler a little bit.  Then mix up some cream cheese with garlic and whatever other seasoning you like (maybe add feta cheese to it or parsley) and top with roasted red pepper sliced (that you can buy at the grocery store already roasted).

oh yeah.. one of you faves it doing mini skewers with grape tomatoes, mini mozz balls, and fresh basil– drizzle a balsamic glaze over the skewers and season with kosher salt and pepper. YUMMY!

I also do a simple water craker with herbed goat cheese topped with a little slice of smoked salmon when I have guests over.  If I’m feeling really ambitions, I sometimes I used shaved red onion and/or capers on it too. Easy and delish.

I usually take the easy route and bring a Suddenly Salad pasta salad and add in sliced pepperoni.

Mini-BLTs: take cherry tomatoes and slice off the top, then scoop out the “guts” with a small spoon. Mix together crumbled bacon, finely shredded/chopped letuce and a little mayo, and spoon that mixture into the tomato cups.

My mom used to use sliced ham and put cream cheese and then roll up and slice, and stick a toothpick in each piece.  Yum.

We went to a wedding last weekend (pot luck) and somebody made small fruit kebobs. They had grapes, mint leaft and strawberries on if I remember right. 

My mom also used to buy english muffins and crab meat and some Kraft old english cheese spread. Toast the english muffins and spread with the crab and cheese spread. and then slice into quarters.
