    <span class="l0" style="display: block">Choose 2 entrees and 3 sides.
    Entrees:
    1. Southwest Dry-Rubbed Pork Tenderloin- Premium Pork Tenderloin marinated with 16 different Herbs and Spices.
    2. Roast Sirloin of Beef Carving Station (Attendant Addition Charge)- Slow Baked with herbs and spices, served with creamy horseradish sauce, traditional fresh horseradish and assorted mustards.
    3. Champagne Poached Salmon- Served chilled with a creamy cucumber sauce
    4. Pan Seared Salmon- Drizzled with lemon dill sauce and fresh dill sprigs
    5. Chicken Parisian- Breast of chicken sautéed with leeks and apples, served with a light cream sauce
    6. Whole Smoked Drunken Chicken- Smoked with Dried Fruits and Tennessee Whiskey, served with a bourbon glaze
    7. Texas Style Brisket- Smoked with Mesquite and Hickory, thin sliced and toped with homemade BBQ sauce
    8. Chicken Tuscan- Pan seared boneless breast of chicken and topped with white wine sauce, Roma tomatoes, artichoke hearts, and black olives
    9. Chicken Florentine- Breast of Chicken stuffed with a blend of Tender Baby Spinach and a Creamy Three Cheese Bechamel
    10. Herbed Baked Bone-In Chicken Breast- Seasoned with a blend of fresh herbs and then baked to tender, juicy perfection

    Ok, I pick:

    #2 - The Roast Sirloin and #9 - Chicken Florentine with the # 1 - Spring Mix Salad, # 7 - Wild Rice Pilaf and the # 9 - Oven Roasted Herbed Veggies

    For a beverage I'd choose the Southern Style sweetened and unsweetened tea

    Choose what you like for the entrees :) For the sides, I'd say you're pretty safe with a salad, starch and veggie (any of them).

    I would pick:

     Entree #s 1 and 4 - tenderloin for the meat eaters, and fish for those that tend to shy away from meat.  I would pick this fish over the other salmon bc the other one is described as having a cream sauce and I tend to shy away from anything too heavy for wedding food. 

    Sides: #s 3, 9, and 11--a salad, a veggie and a starch.  But really any combination of the sides would work, you know your guests best.  So go with what you think most people would enjoy.

     The mint tea sounds good, but sweetened and unsweetened is probably best bc it would please a larger group of people.  But then again, if you are having a bar, people might not be too worried about what kind of tea is available.

    I would choose the pan seared salmon and chicken parisian or chicken florentine.

    sides: sping mix salad, garlic smashed potatoes, and homestlyle green beans.. yummy!

    For a drink I'd serve southern style sweetened & unsweetened iced tea! Wow hard choices!

    I would choose the Roast Sirloin station, the pan seared salmon and the Parisian chicken

    Sides: Spring mix salad, garlic smashed potatoes and over roasted veggies

    Drink: Southern Style iced teas!

    (although someone told me that salads, for whatever reason, are rarely eaten at buffets. So perhaps you could substitute another starch or veggie- depending on your crowd?)

    It's so fun creating menus; thanks for sharing! I would definitely choose a meat and a fish to suit people's preferences.  I'm getting hungry just reading this menu!
