Yum, these sound so good! The white satin sounds really interesting and of course I voted for red velvet, my fave.
I loathe the word moist but after reading though the white satin I would most deff pick that one! dark chocolate and raspberrys yumm
I would taste the White Satin, Red Velvet and Lemon.
If they are all delicious I would have one layer of each flavor so every guest could have a piece of the flavor of their choice. If you need more cake than 3 layers would provide, you could also have have sheet cakes made to provide the quantity you need.
Haha... It's all about what the two of you like but those are some excellent choices. Personally, I picked the 14 karat. Mmmm... have fun choosing!
I voted white satin, red velvet and New Orleans spice. I am a total sucker for spice cake. I think that's going to be a top contender for us.
I know you are only asking about flavors to try, but I wanted to tell you what my son and daughter-in-law's baker told them about red velvet cake. She is a very fine baker (winner of a multitude of awards) and told us she refuses to bake red velvet cake because the red dye is so unhealthy. She only uses the finest fresh ingredients and will not make a cake more than one day before a wedding. Many bakers make them days ahead and refridgerate them up to a week which seriously affects the taste.
I would go for the Marble Chip (what I voted for), the White Satin, and the Chocolate Fudge surprise. All of these flavors sound delicious!

I have an aversion to lemon pound cake - it is my favorite!! It has such a light and airy flavor, perfect for a layer on your wedding cake.
Red Velvet is always popular, as well.
I would recommend doing at least 2 different flavors - that way your guests have options.
It depends on what time of the day you're serving it? They all sounds delicious. New Orleans or Chocolate Fudge would be great for winther, but I could imagine that Lemon Squeeze would be a delicious options for your summer wedding.
Well, it's all cake, so you can't go wrong either way!
I'd vote for the white satin or lemon squeeze. They both sound appropriate for a summer wedding, that is they're not as heavy as the other cakes. But they all sound amazing, I'm sure your guests would love whatever you choose!
I'm echoing futuremominlaw...there is SO much red dye in a slice of red velvet, I mean, turning a dark brown piece of cake red...ugh. It has always really turned me off/given me the heebee geebies. There's like two tablespoons per 9" slice. Apparently the most common source of red food dye, Red #40, is from coal tar. Ick.
How many layers are you giong to have? We are having a different flavor for each of our layers.
My favorite is carrot cake, but that's not my FI favorite. How many tiers is your cake? Can you have more than one flavor?

Are you planning on having multiple flavors or just one? The white satin ir probably the most neutral. If you are having multiple flavors in your cake, I would suggest picking 1 chocolate, 1 fruit, and 1 spice.
oh my, they all sound good! I love chocolate and rapsberries though... so I'll have to vote for the white satin. Yummy.
White satin, Lemon, Red Velvet. They're all big crowd pleasers. I'm surprised you only get to try 3 types of cake though.
For those concerned about the dye in Red Velvet cake, you can always find out about natural alternatives. Red Velvet was traditionally made with beets to give it the red color. I love Red Velvet and voted for it! Also, I liked the Chocolate Fudge Surprise and Lemon Squeeze.
I've actually used 'natural' food dyes quite a bit, including beet coloring. It turns things more of a magenta than a red, and you need A LOT of it to color your food when compared to 'artificial' dyes like Red #40, at least in all the brands I've tried. I don't think most regular cake bakers (as opposed to cake bakers committed to using 'natural' ingredients)would want to work with it.
I'm a firm believer in just making a rich, amazing dark chocolate cake and not worrying about using red dye to fool people into thinking the cake is exciting...that's just how it's always seemed to me. *shrug*
red velvet reminds me of love... and since i'm a new southern girl i think it's so sweet and charming. definitely give it a go!
If you like more than one I agree with maybe having more than one flavor if it is more than one tier. I have seen guests have as many as three! and when the cake is cut the guests get to choose!

Wow, I can see why you wanted help picking! they all sound fantastic!! I would say lemon is a good change of pace from chocolate and vanilla...but the new orleans spice sounds SO tasty, too!

Thanks for everyone's input so far! Originally we were definitely going to try the white satin and chocolate, and it was a toss up for the last one. I love the idea of lemon, especially since it's in June, but the description sounded like it might be a little overwhelming with the cake being lemon, plus a lemon sauce and lemon mousse. I also really like the New Orleans spice. I love red velvet too, but we're actually doing red velvet truffles for a favor, so that's covered. =)
I wish we could try more than just three flavors, that way I know we're not missing out on anything.

Okay, we have a cake tasting coming up and they have a bunch of cake flavors, but we only get to try three. =( We want to make sure we taste ones that will probably be crowd pleasers, so which cake would you want?
These are the descriptions they sent me:
White Satin
A moist, luscious, old fashioned white cake sprinkled gently with Grand Marnier and filled with layers of white chocolate mousse and shaved dark chocolate alternating with Raspberries on a bed of whipped crème.
Chocolate Fudge Surprise
Dense, Dark Chocolate layers glorified with hand beaten fudge, dark chocolate mousse and a rich layer of ganache with crushed English toffee. Our tribute to all world class chocolate lovers.
Lemon Squeeze
A sunny lemon pound cake enhanced with a perky lemon sauce and filled with a tart English Lemon Curd alternating with tangy lemonade mousse for a great taste sensation.
Banana Walnut
A rich cake batter laden with fresh bananas and walnuts, lightly spiced and filled with fresh bananas and whipped cream or if you prefer a soft banana cream.
New Orleans Spice
A soft, lightly textured cake generously flavored with cinnamon, nutmeg, and cloves with a gentle splash of brandy before baking. A soft cream mousse is the favored filling.
14 Karat
Pineapple, walnuts, cinnamon, and carrots make this a heavy favorite. Cream cheese frosting is the popular choice but for a change of pace we suggest our thick apricot filling.
Red Velvet
A light chocolate cake flavor with a deep red color create a unique dessert, filled with a cream cheese frosting or cream mousse is favored as the grooms cake in many southern states.
