laschai:  I would include a better option for vegetarians. There are many hot dishes available for vegetarians. I am sure they must get sick of being presented with a salad as their only option.

laschai:  Please note, if you do know you have vegetarians coming, a salad as an entree is not enough. Usually, if you speak to your caterer, they can come up with something. But some lettuce on a plate, is just not going to cut it. That being said –

Passed Appetizers

Sesame soy beef skewers with red pepper

Baked brie in puff pastry with seasonal fruit chutney and toasted almonds

Phyllo triangles stuffed with spinach and feta cheese

Vegetarian spring rolls with Hoisin-ginger sauce

 

Entrées

Roasted sea bass with Moroccan salsa

Chicken stuffed with prosciutto and Boursin cheese

Beef tenderloin stuffed with spinach and gorgonzola cheese

 

Salad

Waldorf style salad with apples, walnuts and raisins in a citrus mayonnaise

 

Sides

Roasted green beans and grape tomatoes

Creamy baked potato casserole with cheddar cheese and chives

Apperizers: Beef skewers, baked Brie, Caesar salad and spring rolls

Entrees: Chicken stuffed with prosciutto, beef tenderloin stuffed with spinach & Gorgonzola, and greek salad I suppose? A better vegetarian option would be good for the 3rd choice, like pasta or something 

Sides: Oven roasted bliss potatoes and hericots verts

Portobello mushroom and cheddar crostini

Vegetarian spring rolls with Hoisin-ginger sauce

 

Entrées

Beef tenderloin stuffed with lobster and topped with béarnaise saucee

Braised lamb shanks with white beans

 

Sides

Roasted green beans and grape tomatoes

Creamy baked potato casserole with cheddar cheese and chives

Wow, great options! And I think you’ve confirmed that the vegetarians are not getting a salad as an entree right? Because that is NOT a substantial entree!

Passed apps:

Crispy polenta

Salad (which should be for EVERYONE):

Waldorf

Entrees:

Roasted sea bass with Moroccan slaw

(but maybe have it say something like “spiced carrot slaw” because I don’t understand what that means, it’s too vague and might scare people off)

Chicken stuffed with cheddar and apple slaw

(this way, beefeaters can get their beef fill during the apps and you’ll have a meat option for those who don’t eat red meat)

Sides:

Baked potato casserole

Haricot verts

(the fennel casserole sounds awesome but too much heavy creaminess if coupled with the baked potato casserole)
