Although she is not our wedding photographer, Ashley Biess just did our engagement pictures and I am very happy with the outcome. She will definitely be under your budget!
I highly recommend Miller & Miller. We booked them for our wedding, and did our engagement shoot with M&M downtown in July. I previously posted about them here:

We used Anna Guziak (www.annaguziak.com) for our e-photos and wedding. Here is our slideshow! She was $2600 for the wedding for 2 photogs for 12 hours, dvd of your slideshow pics and wedding album. LOVE them. Very kind and fun people.

They're our photographers & are just the sweetest people ever! And their photos are just lovely, which is extremely important.

I second @vaness13181 ! Miller + Miller are the best! They're a super nice, super talented, husband and wife team.
According to their site, I think the're charging $2800 now, but they have no time limit and spend the whole day with you guys on the wedding day.
Also, we were with them about 8 hours for our E session. You definitly get your money's worth!
We are using David Bracho. We are paying almost $3,000 exactly... but you can get packages for much less than that. He has a photojournalistic style... not so overly posed or over lit. He came to our house to meet with us, and was super friendly.
I am also using Miller and Miller. I love their work and they are extremely reasonable given their talent level!
We are using Erica Rose Photography. She did our engagement photos this September and will be shooting our wedding in July. We had a lot of fun working with her and she has packages in your price range.
I also used Anna Guziak like Jen33. She was fantastic and I couldn't praise her more.

Not sure of the style that you are going for, but my friend Thomas Slack does incredible work. Not traditional, but artistic, editorial. You will not be disappointed.

Miller + Miller has such great reviews, but it looks like they upped their price for 2011. They sent me their price menu and their packages now start at $3499 (not including engagement session, that's a discounted $250).
Any other suggestions for Chicago wedding photographers that are $3000 max?

After searching for a great photographer I decided with Ashley Biess. I love her work and she is very budget friendly :) Less then 2000 for engagement and wedding with many extras included! check her facebook page out:

Hi Bees! I'm looking to book the photographer for engagement pictures this spring and of course for the wedding! I'm looking for more of a photojournalistic style! Also hoping for the packages to be below 3,000. Thanks for your help ladies!
