We’re having a 3-tier cake with Italian buttercream frosting for our rustic fall wedding. I envision something along the following design, with slightly more fall-colored flowers as decorations (and again, 3 tiers instead of 4):
Pretty, right? 🙂
What I need help with is my flavors. We can do different flavors/fillings in each tier for no extra charge, as long as the entire outside of the cake uses the same frosting (no problems there, the buttercream is outstanding).
Based on our initial tasting, we know that the bottom layer (12″) will be lemon cake with raspberry preserve filling (FI’s and my personal favorite — we are lemon dessert fiends). And our middle layer (9″) will be chocolate cake with strawberry filling.
What I need help with is the top tier. Do we KISS and make it the same as one of our lower tiers, or should we try something different? The caveat is that we are planning our wedding long-distance, so we can’t just run over to the bakery and taste more options prior to the big day. The only tried & true flavors are our 12″ and 9″ layers, although this bakery is awesome so I’m sure whatever we pick will be delicious.
Also, we will not be freezing the top tier for our anniversary.

I picked lemon with butter cream.. but that was our top tier so i might be biased.. but it was delicous!!

i think vanilla with lemon would be best- not alot of people like chocolate or lemon. the vanilla will be a great neutral flavor. the lemon curd will not be over powering( was at a baby shower couple weeks ago and the had lemon cake with lemon curd it was TOOOO SWEET. many of the slices of cake went un eaten by guests…

I’d probably keep it simple and just pick another tier of my favorite flavor — so the lemon and raspberry in your case! Especially as you know it’ll be delish. 🙂

We had a 3-tier cake and chose for the top and bottom layers to be the same. So, SHOCKER, that’s what I recommend. 😉

We have JUST gone through this ourselves! We will have the bottom and top tier be the same. Red velvet in our case with lemon in the middle tier.

Thanks Bees! We talked about it a bit more, and I think we’ll use the same flavor combo as the bottom layer, which is our favorite. I neglected to mention that we are also doing a cookie table, so even folks who don’t love our cake choices will probably not lack for dessert, lol.
