Got a new proposal from a different caterer – loving all these options!
Duck Confit Canapé:
duck confit served on an apple chip
sliced honeydew, basil leaf, prosciutto ham
grilled pineapple chunk, sliced Mexican chorizo
watermelon cube, feta cheese, mint leaf, wildflower honey
Southwestern braised pork, green chili gastrique
Buffalo Chicken Meatballs:
moist chicken meatballs cooked in Frank’s RedHot sauce
traditional Peruvian recipe for citrus cured shrimp, plantain scoops
Southwestern Crab Cake:
lump crab meat, roasted corn, crisp red pepper, smoky paprika crème fraiche
Chips & Dips:
warm corn tortilla chips with chunky salsa, queso fresco & house made guacamole
jalapeño stuffed with cream cheese and wrapped in bacon, completely made in-house
“PB&J on the Half Shell”:
jalapeño ‘half shell’, Nutella and homemade strawberry preserves, yellow pepper confetti
Latin Pickled Vegetables:
not your average vegetable crudité – carrot batons in jalapeño, green beans in coriander, jicama in cumin
I am having 50-60 people at my wedding. I think I want around 3-5 options for appetizers.

Well, I’m boring so the only things. I would eat would be the chips and dip and pbj things. I don’t know about your crowd but that is a lot of seafood and peppers which can be fairly polarizing in tastes. Even the fruit which is usually a safe option has some crazyness for those of us with less refined palettes.

@kateisstoned: Yum! I picked the crab cakes, stuffed jalapeno and fruit skewers. I always think fruit skewers are a good idea because they are light and “palette cleaners”.

Okay, after reading the descriptions, the only things I would eat would be the crab cakes and chips/dip. I can’t imagine trying to eat Nutella and strawberry preserves on a jalapeno.

Those meatballs sound amazing- I’ve recently been craving buffalo sauce and now my mouth is watering. The fruit skewers sounds yummy also and you can’t go wrong with chips and dip for pickier eaters!
