I am not Jewish, but I think there is a name for the glass smashing ceremony. Maybe call the boy the "Holder of the (insert what they are called here)"
Perhaps just call him the glass bearer? ;-) The breaking of the glass signals the end of nissuin (the wedding ceremony), but I don't think there's an actual name for the glass breaking.

Hi there,
My fiance' and I are having an interfaith ceremony. He is Jewish and I'm Catholic. As I'm putting the program together, I've been wondering what you should call the child that carries the glass that will be smashed at the end of the ceremony? Currently, we're just calling him a ring-bearer, but it's his brother that will have the rings. Hmmmm....
