A couple of places DH and I love are Ashland Oregon, we like the plays, there is a great dinner theater there, and its just a fun little town (lots of great restaraunts, etc), also its touristy so their a lot of places to stay that are very nice and pretty reasonably priced. Jacksonville is near there and it has several great places for wine tasting, also grants pass is near their and the jet boat excursions are so fun! You could all of those places in one trip and I think you would have a fabulous time!
If you want to be less south, Portland is a really great town, esspecially if you guys are foodies! It is a really unique and fun place, but I'm a lot less familiar with it and most other Oregon locations just because they are farther from us so we visit less.
My DH and I love Lincoln city, we walk on the beach, hike near by trails in the parks and it has various types of restaurants. We go there every summer as often as we can for a weekend (we live only 50 miles away). You can visit Cannon Beach on the north part of the coast, it is artsy and has a nice quiet small tucked away feeling too it. Bend is a nice city too, it is in the mountains for hiking, skiing, rafting and a lot more. I t has a lot of quiet places to visit too. It is a nice place summer or winter. If you are into wine then come to McMinnville, center of Oregon's wine country. Many parks are near by, wine tasting all over the place, nice quiet laid back town. There is a thespian club that puts on plays all the time, plus some great little B&Bs.
I stayed in Florence once on the coast. My family got to go horse back riding on the beach! I'm not sure what type of honeymoon you're looking for.. if it's more adventurous (you did say hike!) I absolutely love Crater Lake. It is my favorite national park.
Mt Hood! I vacationed out there about 10 years ago and loved Mt Hood.
Bend is a great place. Places like Sunriver, Black Butte and Eagle Crest have places to rent and things to do!
Cannon Beach is really pretty, DH and I are looking into taking a vacation there this summer. Pretty views, some touristy things, and a nature reserve for hiking.
Silver Falls is gorgeous, quaint, and has tons of amazing hiking trails. 10+ waterfalls in a 6 mile hike (but you don't have to do the whole thing). There is an amazing cavern, too, behind one of the main falls. The town is small but vibrant and it's less than 2hrs from Portland.
Also, Netarts is a super cute coastal town outside of Tillamook. There are some stunning trails overlooking the water and the B&Bs/motels are reasonably priced. A few breweries are within driving distance and nothing beats the cheesiness of the Tillamook Cheese Factory tour... :)
Drive down the coast We loved Cannon Beach and Florence. The Waterfront Depot restaurant in Florence has fabulous food! Prices are inexpensive compared to where we live.
