@AussieSummer:  How big is the piece of lamb? or is it smaller chunks?

Does the meat easily pull apart?

If the meat easily pulls apart, it is cooked. Slow cooking usually yields different colors than grilling, pan frying, or oven roasting.

If it is a large piece of lamb, do you have a meat thermometer to check the internal temp?

Internal temp should be 60-70C.

Depending on the size it may just need more time if it’s pick it may just need another hour.

If the internal temperature, if it’s above 145 you’re good. Lamb is supposed to be served medium-rare to medium, not well done.
