Help with a Jewish-Christian ceremony to be officiated by a captain of a ship

My FH is jewish and I am in the process of converting but will not be finished in time for our wedding in a few weeks.  We are having a friend marry us and we are incorporating a number of jewish traditions into our ceremony, including a chuppah, circling, seven blessings.  Here is a website I found very helpful when I was searching for aspects of the jewish ceremony we could include: http://www.interfaithfamily.com  There are a bunch of resources detailing ceremony traditions practices.

We could not find a rabbi in the area who would marry us because I am not yet jewish but we did find a Cantor who was willing to preside over the ceremony, co-preside or sign off on official documents depending on what we needed.  We decided not to use him but it was great to know that was an option.
