I’m the type of person that can eat the same thing day after day, week after week and still enjoy it…I admit I’m a little weird. This week for lunch every day I had a salad (spring mix, carrots, blueberries, feta cheese, and chicken breast with balsamic vinaigrette. Although it was very good, I’ve had enough of it, I CANNOT eat this again next week. Can you give me some idea ladies?

I keep deli meat in the fridge at work and bread and Progresso soups (various varieties) in my cubby area. So I can made turkey sandwichs and have a bowl of soup for lunch.

I made a salad last week that was awesome: mixed greens/baby romaine, avocado, lentils, queso blanco, halved cherry tomatoes, asparagus, and sprouts. I had it with this delicious dressing:

I purchase 98% fat free lunch meats and make a sandwich on a whole wheat “sandwich thin” (I think that’s what they are called anyway). I also use avocado and light mayo as a condiment. I’ll add lettuce, tomato, etc. It’s pretty good and satisfying!

I love to make a wrap for lunch my favourite at the moment is chicken breast sliced with lettus tomato, carrot, cucumber and cheese with sweet chilli sauce on it 🙂 it’s so good

There are so many kinds of salads. I like to make saldas with my leftover dinners.
- leftover steak, blue cheese, red onion, spinach, shredded carrots, diced tomato and red wine vinaigrette
- grilled veggies, chicken, coconut flakes, cucumbers, raisins greens & poppyseed dressing
- leftover cubed pork, craisins, carrot, goat cheese raspberry vinaigrette
and so on.
Alternatively, make yourself some sort of casserole or crustless veggie frittata to reheat a few days.
Ie sautee mushrooms, asparagus, and spinach. layer in a greased square pan. Add salt and pepper, maybe diced turkey pepperoni. Add scrambled eggs and milk. top with a bit smoked goua and bake till done.

@ThreeMeers: +1. Fritattas are my go to. I mean, you can eat them for breakfast, lunch or dinner and they taste great reheated! I’m actually making one right now. Coincidence? Ha.

I usually take rotissere/grilled chicken with half an avocado, veggies like green beans, tomatos, carrot sticks and cheese.
