It's a formal occasion, it's okay to use real names.
I think this all comes down to how formal you want to be. My FI has the same first name as his father, but goes by a shortened version, and they have different middle names, so they aren't Sr. and Jr.
Hence we will do:
Joe [Last Name]
son of Joseph [Last Name]

After reading christalynn11's post, I realized I need help from the hive, too!
(note: these aren't our real names, but you get the picture).
My FI's full legal name is Donald Ray Jones III, but he's gone by Donny his entire life. His Dad, as you would assume, is Donald Jones, Jr., but he has gone by Butch his entire life. So, I am at a complete loss for how to word the invites and would appreciate your help. To give you an idea, here is the wording of our invites:
Mr. and Mrs. Jim Smith
request the honor of your presence at the marriage of their daughter
Sarah Lynn Smith
to
__________
son of Mr. and Mrs. _____ Jones.
