I am doing menu cards are each place setting. Below is the menu. (Formatting was removed when I pasted in).
Should I list or not list what the tiers of the wedding cake are?
We are having wedding cake and a dessert table aka viennese table. I don’t like the way I have it worded, any other suggestions?
Berry Trio over Mixed Greens with Mozzarella
Grilled Filet Mignon
With Bordelaise Sauce
Maryland Crab Cake
With Cocktail and Remoulade Sauces
Asparagus, Baby Carrots, and Roasted Red Potatoes
Carrot Cake — Dulce de Leche — Vanilla Fudge
Selections from Viennese Table

Hi, I’ll answer: Should I list or not list what the tiers of the wedding cake are?
As someone severly allergic to nuts, as a guest I would appreciate knowing what’s in the wedding cake, even if just added with an asterisk at the bottom of the menu in tiny font. It would help me decide whether it is no-go or not.
Regarding Q2: I’m rubbish with menu wording, but it seems fine to me.

If you have room, I would do it. Would get guests excited for sure! I would even throw in one or two things under the Viennese hour (“cookies, cupcakes, and more!”)

I defintiely would include the different flavored tiers on the menu and agree with the PPs suggestion of adding even some of the items on the dessert table to the menu.
Also I think your wording is fine. If I was doing it I would change main course to Entree: Your choice of: and then list then entrees. Other than that, I think it sounds good.
