Do you want any mention of parents/family on the invite? Not names, but just to come celebrate with them too? Reason I ask is although we are contributing, my parents are also. We are doing:
Please join us
together with our parents
for a celebration of love, friendship, laught and family
as

exchange vows and are united
as husband and wife
yadda, yadda, yadda...
I would do a search for "invite wording" and "couple hosting" and see what comes up. You should find lots of examples that all cover the basic info with differences in formality and tone. This is helpful for getting started and maybe even finding exactly what you want.
As for your seating issue, I know many people put this info on the rsvp card. We did "___ seats have been reserved in your honor" so people knew how many were invited.
There's really no need to clarify the no plus one thing on the invitation... The invitation should just be addressed to whomever the guest is... if you are allowing them to bring a guest, just write 'and guest' or 'and miss mary sue' on the envelope. If it doesn't say 'and guest' then the recipient should know they are not allowed a plus one.
Here are a couple different wordings:

I am attempting to DIY my invitations from Michaels and I am at a loss with wording. We are paying for the wedding ourselves and I see most invitations have so and so request your presence at the marriage of their daughter etc... Also we are having limited seating so no plus ones unless they are married. Can anyone help me? I really am clueless on this. Thanks in advance if you can help!
I want to add we have reserved one seat in your honour etc... May 22 2010, ceremony is at 4 reception to follow..
