I wore 3 inch heels for my outdoor ceremony which was on grass. We used these things called heel savers, you can find them online and they really do work! They are clear plastic things that go on the bottom of your heel to make a larger surface area so you don't sink into the grass
I have used heel savers in the past (when I worked catering in college) and they work great! They keep you from sinking and you don't stain the heels of your shoes from the dirt and grass!

Hi!
I'm getting married in July next year and my ceremony is on a golf course a good distance from any concrete surfaces (meaning a long walk for me and my guests in the grass). Even though I love the look of lots of beautiful heels, I think that my maids and I will have to go the wedge route because of the grass. For me, I want the shoe to be stylish, re-wearable, comfortable, and at least 3 inches, but other than that I'm not too picky since you won't see it anyway. However, the bridesmaids will be in short dresses and their feet will be very much on display. I've seen a lot of Charles David wedges that were really pretty and not too casual. Any other suggestions?
Thanks,
Claire
