Homemade marinara sauce recipe

This is the one I make every week:

big can of tomatoes

onion 1 big or 2 small

garlic 4-5 cloves

whatever veg you like – carrots, celery – 1 or 2 of each

basil – stem with a bunch of leaves

salt – 1 or 2 tbsp

sugar – same as amount of salt

olive oil

get a big pot, preferable ceramic or cast iron, put a big glug of olive oil in the bottom, chop up all veggies and simmer in oil till soft (whatever size you want – I do big chunks and then puree it), add canned tomatoes and now here’s the kicker – leave simmering covered and very low temp for several hours (3-4 at least) then puree and jar or freeze – super easy!

add more onion and sugar to make it sweeter, this kills the “canned” taste, add carrot to round it out and celery adds veggie flavour.  if you’re going to add meat, pork is ten times better than beef for flavour. fresh super-ripe tomatoes are even better if you can get them.
