In wedding planning I let my fiance choose the cake, grooms attire, cocktail hour, wine and the wedding favors. Its pretty much been a 50/50 split. He isnt wild about planning but really has gotten into it since coming up with colors and a theme (not too theme heavy though)
Our whole color scheme/hint of theme is based round the Detroit Red Wings, guess whose idea that was? No, it was both of us but he was very giddy about that. Instead of flowers on their lapels he will have a red C and the groomsmen will have a red A. It's little things like that, he's picking a majority of the music...let's see, I don't know, the major decisions we made together. Renovated Opera House for our ceremony, the site of our first date for our reception. He said he's happy with the little things like the C and A's lol!
For our wedding the main thing that expresses my FI is the music. That is one of his true loves so I allowed him to mainly take control of what should be played so he will work closely with the DJ to get this settled. I also incorporated his artistic skills by allowing him to create the monogram and he will help with designing the table numbers which are mini-easels with mini-canvases so we will paint the table number on. He also chose his tux and the groomsmen's tuxes as well.
You can incorporate his favorites (Star Wars/ Medicine/ Science/ Video Games/ Sports/ Navy, etc>) for the table numbers or themes. Like each table could be named a different Star Wars character or something. OR like me you can get a themed garter set. I bought a Superman garter for my FI.
You'll have to think creatively but it will all work out!
He's expressed through the clothes he chose (of course I vetoed shorts which is what he'd rather wear), He picked our location, menu and our band. After that I took over and told him he wasn't allowed to make anymore decisions :)
We are having an Oscar themed reception in honor of his love for movies. Pictures of his favorite movie stars will be the table names. He also chose the tux for him and his groomsmen. We also decided to make little activity books for the guests that will include fun facts about us as well as trivia, a crossword puzzle etc. That way, people can get to know us a little better.
My FI is into video games, anime, Futurama and some other stuffs... LOL Can't think straight... IT'S FRIDAY BABY! LOL
We'll probably play either the song that plays when Mario rescues the Princess or something from Katamari when we're pronounced married (I hate "man and wife") and we walk back down the aisle. We're playing a song from Trigun (anime) during the ceremony (It's called Not An Angel and it's BEAUTIFUL). I made a ring box out of an Altoids can (they're his brand of heroine (anyone get that refernece???)) so that's totally him. The cake is chocolate (he LOVES chocolate). He loves to play ping pong - our venue has a table...
It's easy for us because I like the things he likes too, so I can incorporate stuff that makes it him AND me LOL.
I thought about using video game characters for table names but then we decided on something we both love (LOST! LOL), so you could do that... You could enter the reception to the Imperial March or some music from a Video Game. You could have pictures of him in his Navy gear & display them. You could do trivia on napkins (one of the bees did this - I'm not sure who) about him...
I'm out of ideas for now (Did I mention it's FRIDAY!?!).

This is a great thread because I was wondering the same thing...my fiance is not into planning the wedding at all, but I want to make sure both of us are represented. Keep the good ideas coming, ladies!
We're having Bud Light, which he likes. And Gin and Tonics, which he LOOOVES.
I guess other than that it's all about me. 
That's what he gets for being far away and not being able to help I guess!
We are having a themed wedding with vegas-style b/c we both love vegas/gambling/casinos/games/etc! I guess our theme is mutually loved and therefore it is about us together vs parts that express him or parts that express me....it is a "we" wedding day!
Also, you could do a groom's cake at the rehearsal dinner vs at the wedding to express his love for Star Wars, etc ;)
Oh true that... I guess I wouldn't mind Star Wars at the rehersal dinner... lol... I just don't see it and his other interests mixing in w/ our wedding theme.
I also just thought about this... I will want a photobooth... probably more than one backdrop and props. I could totally deal w/ a Star Wars or sporty photobooth... that could be a fun option!

Another post just sparked a thought I've been pondering... How do I express him in our wedding? We don't really want a groom's cake... and we're not sure if he'll even wear his Navy dress uniform. I mean, its reallllllllllly easy for brides to express themselves, but harder... I think, to express the guy's style. He isn't really into the planning stuff... and I certainly don't want it to be all about me. Haha... how do I encoporate Star Wars/ Medicine/ Science/ Video Games/ Sports/ Navy? I was wondering if others were thinking about this and what they are going to do.
