I don't know if it works for Ireland, but have you tried Kayak? They search like everywhere...
I would for sure recommend a travel agent for this. They can not only steer you in the right direction for best area to stay in (for what you are looking to do) but also can get you great prices on hotel and airfare. They do charge a commission but its worth it to know what your getting... (plus its typically no more money then if you would have booking things without the agents discount - so sometimes it ends up costing the same)
I bought the Frommers book for the start of my hotel search and used it as a jumping off point. Other than that, I looked for recommendations on sites like TripAdvisor and Frommers online community. They cover pretty much anywhere in the world and since they are all individual reviews submitted by actual customers, they are usually good recommendations. To actually book places once we'd decided, I called the hotels directly instead of booking online, just because I prefer to deal with actual people instead of automated booking programs and so I could indicate that we will be on our honeymoon.
Research on TripAdvisor. We used Expedia to book and had great hotels in Ireland last year. Budget for a car with automatic transmission- you'll be thinking about trying to stay on the left, negotiating traffic circles and looking for the rare sign. That's the only time my husband and I fought on that trip... when we were caught in the Twilight Zone loop around Dublin.
Where in Ireland are you going? When I went to Ireland, we stayed at a B&B and there were a lot of pepole who ran B&Bs from their home. We booked it online ahead of time but I don't know remember how as my freind took care of that part. I would receommend looking into the B&B option though, especially if you want to stay someplace outside of Dublin.
For hotels, I generally like HRS www.hrs.com. They are especially good for their selection of European hotels.
I am going to France and Italy, and we are booking all the honeymoon hotels ourselves. I would suggest picking up a travel guide (Lonely Planet, Frommer's etc...) and starting there. If you book directly through the hotel website, they often give you a discount rather than if you go via a travel agent or a third-party website. Some hotels also offer discounts if you mention you heard about them through your travel book. It is a lot more leg work, but we have found it worth it so far!
