I would just be honest! Or say you just want the ring back so you can think about it all a little more.

I would go to the jewler directly and get your ring back. If you are not comfortable with them, do not leave your heirloom ring there! It just isn’t worth it.

After that, go with your boyfriend to a jewler you trust. have them show you the stone in different settings and with different side stones. If your boyfriend already involved you in the ring decision process, then he really need to hear your wants and not go back on his word.

Seems like you might want to just let him do his thing. You have already controlled the situation by giving him the center stone, telling him what you wanted. If you wanted more control then that, you probably should have comunicated that from the begining. It’s a bit emasculating to demand your heirloom back and declare “You’re not doing it right”.. BTW a more expensive mount doesn’t equal a BETTER mount and  the smaller sidestones will probably allow the center stone to pop more than the larger ones. I vote let him do his thing and wait for a proposal.
