What about tying up some loose ends? Open cards and gifts, go out to a fantastic lunch and dinner, get a couples massage or watch movies in bed all afternoon!
Personally I would plan on being so knackered that all I can really imagine doing on the Sunday is eating, snoozing, watching movies and um...playing Twister :) But if you don't think this is for you, what is there to do around the hotel? And what would you normally do on a Sunday on vacation? Go to a gallery or a museum? The zoo? Will there be family nearby who might want to meet up for an outing or lunch somewhere (if you want to spend time with them)?
hmm maybe opening up some gifts and getting a head start on your thank you cards... long lunch, movies in bed... lol sorry if i'm not helping... i'm the same as you - i like to be on the go when i'm on vacation for sure!

We've been stalking our flights online and they just jacked up the prices for our ideal flights. So now it's cheaper for us to stay Sunday night in our reception hotel and fly out Monday.
What do we do all day Sunday? We are getting breakfast in bed from our hotel (no family brunch in the current plans). We're pretty much "doers" on vacation, we like to get out and do things. I don't know what to do on our first day as a married couple from a hotel room.
Ideas?
