How do you make a macaroon tower?

    Have you seen those towers of macaroons? I'll find an image on Google and attach it here..

    Does anybody know how they get the macaroons to stick like that? Is it some sort of baker's trick?

    I'm going to bake a couple batches a day before the wedding, and I'd love to stack them into a tower. Right now I'm thinking of stacking them and then for the outer layer, propping them up vertically and sort of leaning them in, so they hopefully just balance there nicely. That way the whole tower can be edible, rather than creating some sort of cardboard cone/pyramid and sticking macaroons onto it.

    I couldn't find any good instructions by doing a Google search.

    What do you girls say? Any tips or ideas on how I could make one of these? Thanks so much for your help!

    A traditional croquembouche is made/secured using melted chocolate or caramel!! Yummy

    I have seen a macaroon croquembouche up close & just "leaning" the cookies in probably wouldn't be successful! It would collapse the second it were moved! Eeek! Without a base to stick to it would look more like a stacked tower than the clean lines of the picture!

    Typically macaroon towers are constructed my "glueing" the cookies on a foam cone shaped base covered in parchment paper or foil! You could use caramel, chocolate or even royal icing to secure the macaroon to the cone :)
