I'm not having a rehearsal dinner so I couldn't help you with exact wording, but I can tell you that "rehearsal dinner" translates to Spanish as "cena de ensayo". Googling a bit for that phrase gave me some articles (in Spanish) that could be useful to you. The first one even has some sample wording for an invitation to the dinner:

I'm of Mexican decent and my fiancee is white. My family has no clue what a rehersal dinner is. We are having a rehersal dinner at my parent's house Mexican style. We are having a Taquiza with beans and rice! I thought it would be nice as my Fiancee's family is coming from Oklahoma and have no clue what a taquiza is. They seem to think that a Mexican taco is a hard shell taco from Taco Bell.
I'm getting ready to make my own rehersal dinner invites and have no clue how to word it. Any suggenstions???
