I thought deciding on the food choices would be easy, since I am a big fan of eating, but my caterer and I keep going back and forth on the choices.
Question: Do you think blackened chicken with a lemon dill sauce or a round roast carving station with would be a better choice for a buffet entree (other buffet item will be crab cakes)?
So, the latest menu (and hopefully close to the final menu) is…
Apps during cocktail hour: Boiled and peeled Shrimp w/cocktail sauce; Cheese, fruit and veggie platters
Buffett menu: Crab cakes with sauce on the side and blackened chicken or carving station (see ques above)
Sides: Mashed potatoes and spinach morney (Spinach with creamy cheese sauce)
Dessert: Wedding Cake
So, what do you think? Did you have a hard time putting your menu together??

Ditto carving station — I’m not a fan of "burned" food. 🙂 I know it’s a legit style of cooking but I just don’t like it. 😛

I think I would go with the chicken, the chicken and the crab cakes would both pair well with white wine, the roast would need red I think but crab cakes, depending on what they are made from don’t go with red wine.

That sounds so yummy. Crabcakes are my favorite.
I think if I were choosing between the carving station and the blackened chicken, I’d choose the carving station.

it sounds great… i’d definitely dig into the crabcakes myself, but if it was between chicken & a carving station: i’d go for chicken.

I am ready for lunch too!! Working on menus should be delegated as an after lunch task. =)
December, your reply made me laugh! I had the worst "blackened" steak at a wedding once that had so much pepper on it, I couldn’t take a bite without getting something in my teeth. One guy hardly ate any of his and got quite toasty… I want everyone to eat!

That sounds really good, I vote the carving station. Blackened to me also implies spicy and I dont like spicy food 😉

I vote carving station. I’m obsessed with carving stations and plan on doing one at my wedding. Also, I think blackened chicken can go wrong sometimes in a buffet situation. Blackened chicken tends to dry out easier. That has been my experience with it anyway.

I’m with naangel…I don’t like spicy foods and blackened=spicy!

Yes, not everyone loves blackened … like I do … haha, but I would go with the carving station.

Personally, I prefer carving stations, since the food is fresher — cut in front of you, not just sitting in a chafing dish. Good luck with your decision!
