If you want to go on a Saturday or Sunday, it's probably good to call at least a week in advance. The weekdays will be easier to get a spot.
I would make them now, just in case the salon you are going to is a really busy one.
I don't think it's ever too early to make one, unless they haven't started a schedule for that month yet! The first time I tried to go to Kleinfeld, I wanted to make an appointment for the free day I had in the city. It was a Saturday and fully booked a month in advance!
But then on Monday I emailed the Vera Wang flagship store in NYC and asked if it would be possible to come in some time Thursday. She wrote back today and said it'd be fine, and gave me my choice of time of day! It really depends.
