I am really struggling to decide how many flavors to use in my cake, and which tiers to put them in. We are having a 3-tier cake, and I'm thinking probably a different flavor for each tier. Right now I'm thinking white cake on the bottom, chocolate cake in the middle, and lemon or banana nut on top. (Trying to think most to least popular) How many flavors are you guys using, and which flavors are going in which tiers? I would love to hear what everyone else is doing. My biggest fear is that the most popular flavor is going to be something I wouldn't have expected, and I'll have put it in the top tier when it should have been on the bottom.
We did 3 flavors as well. We did almond in the top with hazelnut filling, which was specifically for my mother, but the venue never cut it. The middle tier we did chocolate on chocolate, and the bottom tier was vanilla with raspberry ricotta filling. We did the same thing thinking that our favorite was the raspberry. No one said anything about what they really peferred to us, so I wouldn't obsess about it too much.
Top (smallest) : Green tea cake (sounds weird but SO good) with milk chocolate mousse filling and dark chocolate ganache icing
Middle: Lemon-raspberry cake with white chocolate ganache icing
Bottom: Devil's food cake with caramel filling and dark chocolate ganache icing.
So yeah, my cake might look kind of weird. I don't care. :)
We are having 3...for the wedding cake the bottom layer is vanilla, the middle and top are lemon/orange and then the grooms cake is red velvet... yum, yum, and yum!!!
We're only having one flavor. Orange-zested Sponge Cake -- yum!
We actually had a groom's cake too. That was apple spice cake with walnut icing (that ended up being the hands down favorite) I had forgotten about that.
@Apple Cake: In that case, your handle is very misleading!! ;)
We are having three flavors in our cake!
Bottom: Vanilla with Raspberry Filling
Middle: Chocolate with Bavarian Cream Filling
Top: Spice Cake with Cream Cheese Filling
1st tier white with tripleberry mousse
2nd tier chocolate with tripleberry moouse
3rd tier white with strawberry filling
sheet cake white with trippleberry moouse
grooms cake chocolate with tripleberry mousse
all with buttercream frosting
@mattsarmybride: have you asked your baker what they recommend? Our baker was very adamant that certain flavors should be at the base as some are more popular than others. We are doing 4 flavors but she said that 2 of the 4 are definitely more popular at the wedding shows she does.
We're doing:
Top, small tier (for us to keep) - white cake with raspberry creme filling
Second tier - Chocolate cake with caramel creme filling
Third tier - white cake with raspberry creme filling
Fourth (largest) tier - white cake on top, then raspberry creme filling and chocolate cake on the bottom (so both chocolate and white in one piece)
Then the groom's cake will be full on chocolate cake with caramel creme filling
I'm thinking 2 - biggest tier will be vanilla, second tier is chocolate. Top tier will probably be vanilla, but we're saving that for our anniversary.
we had three different layers with three different flavors. as to which should be which layer make sure you talk to your baker because some flavors have to be on the top or bottom due to their heaviness, airy-ness. :)
2 flavors...3 tiers. middle one is chocolate and the other two are starwberry vanilla bean...can't wait for the cake.
We are having two flavours,
1. Red velvet - for the one we keep
2.Vanilla
3. Red velvet
I took this from baker's site. I almost faint when I see it. The cake is one thing I know is truly going to rock at our wedding.
White Satin A moist, luscious, old fashioned white cake sprinkled gently with Grand Marnier and filled with layers of white chocolate mousse and shaved dark chocolate alternating with Raspberries on a bed of whipped crème.
Chocolate Fudge Surprise Dense, Dark Chocolate layers glorified with hand beaten fudge, dark chocolate mousse and a rich layer of ganache with crushed English toffee. Our tribute to all world class chocolate lovers.
Almond Cake A soft white cake with a touch of almond is filled with layers of almond cream cheese and a delicious Bavarian crème filling.
Triple Berry A moist golden vanilla cake reminiscent of a pound cake is filled with layers of fresh berries and whipped crème. ( Seasonal )
Bottom: Strawberry cake with cream and strawberry filling
Middle: Yellow cake with vanilla cream and chocolate ganache
Top: Banana cake with buttercream filling (picked this cause FI loves banana anything and we're going to freeze the entire top for our first anniversary, although maybe eat a little when it's fresh too :p )
The whole cake will have buttercream frosting.
@mightywombat: Ohhh, I love matcha green tea. Your cake sounds delish :)
We did cake tasting on Sunday. Ours is 5-tier for 165 ppl. and we chose 3 flavors...
Top - saved for next day brunch, is chiffon cake with raspberry jam and rum custard
2nd - devils food chocolate cake w/hazelnut buttercream
3rd - chiffon cake with raspberry jam and rum custard
4th - carrot cake with cream cheese frosting
5th - devils food chocolate cake w/hazelnut buttercream
Yum! Me want cake :)
We also had a 3 tier cake and used the same methodology as you.
8" Top - Carrot Cake with Vanilla Pastry Cream
12" Middle - Hazelnut Sponge Cake with Chocolate Mousse
16" Bottom (biggest) tier - Chocolate Cake with Cappuccino Mousse
IMO chocolate is always the most popular flavor! Middle tier is one of my favorite cake combos, hazelnut, and of the ones we tasted we all liked that the best. Top tier is a carrot cake bc it's about the ONLY cake my husband likes.
We had 140 guests and had SO SO much of the cake did not even get cut into. Probably because we also had a ice cream sundae bar!
My caterer saved us the top tier and I'm totally bummed I left it in the trunk overnight. :(
@mightywombat: Who's your baker? We're doing Green Tea cake too!
We've got a 3 tier cake. Top tier is Lemon cake with Raspberry butter cream, middle is Green Tea cake w/ Heath Bar, and the bottom is Chocolate cake with Chocolate Chip Cannoli Cream.
My mouth is watering thinking about it.
A few....
Italian Cream
Red Velvet
Buttercream with rasberry filling
Buttercream with strawberry filling
Carrot
Mmmmm. I can't wait.
I didn't want to worry about multiple flavors and people not getting what the want, etc. so we're having one flavor: spice cake. But we decided to have our anniversary cake made in a different flavor because we don't care about eating the same exact cake we had on our wedding day.
Yay, I'm happy to hear that other people like the green tea flavor! I never would have thought of it, but at the tasting it was one of the flavors available and we thought it was soooo yummy.
My baker is part of the caterer I'm using - it was the only downside to signing them, that we had to use their baker. But she seems really good, so I think it will be ok. Our caterer is Pepper's Catering in central MA.
We had three flavors:
Bottom: Chocolate
Middle: Spice cake
Top; White Cake (but we saved it and will be eating it on our 1 month anniversary :)
Top tier: Key Lime
Second tier: Red Velvet
Third tier: Spiced (basically carrot cake)
Bottom tier: Key Lime
**I based it off of the flavors I like, not what everyone else will eat, oh well! My favorite is Key Lime, so I want to eat that when we cut the cake (bottom tier) AND when we eat it on our anniversary (top tier).
We're having a cake buffet, so we'll do six different flavors:
1. Chocolate cake with peanut butter filling and chocolate frosting
2. Chocolate cake with raspberry filling and mocha frosting
3. Carrot cake with spiced cream cheese frosting
4. Red velvet cake with fudge filling and cream cheese frosting
5. NY style cheesecake
6. Blueberry cake with lemon filling and vanilla frosting.
@mattsarmybride: I had two but I don't think my guests knew there were two choices. I don't think my caterer knew there were two choices. Oops, I probably should have told them about it. The cakes looked somewhat similiar too.
Come to think of it, I don't even think I remembered I had two types of cake during my wedding. Cake fail! lol
I had almond cake with almond filling and a pound cake with a hazelnut filling.
We are doing two different flavors for our 4-tier cake. The venue is going to serve it so that everyone at each table gets the same cake, but then they're going to put the extra slices out so people can try the other flavor if they want.
4 tiers and 4 flavors! The entire outside of the cake will be frosted with vanilla buttercream. Here are our cake and filling flavors:
Bottom: Black forest (chocolate cake with whipped cream, cherries, and cherry/chocolate liqueur)
Next tier: Gold cake with chocolate mousse filling
Next tier: Chocolate cake with chocolate-champagne mousse
Top tier: Gold cake with white chocolate mousse and fresh strawberries
It'll be a lovely alternate of chocolate and gold cakes with some basic flavors as well as some fun flavors.
SO is making 3 wedding cakes for us (or so he says). One will be hazelnut chocolate mousse, one will be a cheesecake of some kind, and one TBD.
We're having 5 flavors:
Chocolate
Red Velvet
Carrot
White with raspberry filling and
Strawberry with Custard filling
I cant wait for them. We couldnt decide either, so we picked them all!
grooms cake chocolate with buttercream filling
first tier wedding cake Red velvet with cream cheese filling
second Choco and Strawberry marble with strawberry filling
third pink champaign with pink champaign buttercream
and lastly double chocolate with chocolate ganash (sp on all lol)
YUMMY I heart cake.
We had cupcakes but we had four flavors. We had chocolate with chocolate buttercream, vanilla with vanilla buttercream, red velvet with cream cheese buttercream and carrot cake with cream cheese buttercream. They were all pretty popular though, I can't think of one that was eaten more than the others besides the fact that there were the most carrot cake cupcakes left.
top tier is orange cake with buttercream filling.
middle tier is vanillla cake with raspberry filling.
bottom tier is red velvet with cream cheese filling.
Yum, Yum and Yum.
Fis favorite is coconut with raspberry filling so there will also be a grooms cake too.
@Gerbera: Chocolate is often the favorite, but unfortunately, a few people at our wedding have to avoid it b/c of allergy or dietary reasons :\. We're thinking of chocolate either out completely, OR have it as a filling layer so people could pick it out if need be.
I'm having 3 flavors because we have 3 layers.
We are having 4 flavors- bottom layer will be vanilla with cream and strawberry filling, second layer will chocoholic plate fudge with chocolate mouse filling, top will be funfetti with buttercream filling! The grooms cake will bea animals amaretto with a filling I haven't decided on yet but that was the one flavor that my FI loved at the tasting that we couldn't get into the cake!
