Are you going to make your bouquet yourself? If so, are you doing a trial bouquet? That would be a good time to test our your flower amounts.
depends on the type of arrangement you want really.
for instance with my dress I wanted something on the smaller side since the dress is very ornate. Also I have small hands (size 4 ring) so I went will a smaller arrangement of 15 or so roses and some ivy leaves around the base and I think it is the perfect proportion for me and the dress :-)
why not go to a store and pick up some flowers and try clustering them together and see what seems right to you.
my bouquet had approx 30-40 flowers in it. I used hydrangeas, peonies, roses, tulips, alstromeria, daisies and mums.

How many flowers would I need for a bouquet? I read 30-60 for roses, but I'm using sunflowers, along with some smaller flowers (not sure exactly what kind yet) so I'm thinking less. Any idea?
