I have a sash/belt on my dress that is champagne colored satin (I think) that I would like to coordinate with my FI’s tie or vest, but I don’t know how to do that without showing him my dress… Do you bring it into the tux shop to match the fabric? Also, my dress is ivory, should his shirt be ivory??

He does not need to wear an ivory shirt. They often look a bit yellow and dingy. As his shirt will be separated from your dress by his vest and suit, white will look better.
As for matching the sash, find a paint chip in a matching color to take with you when you are looking at vests/ties.

Find a matching paint chip or fabric swatch for him to take. If you go to David’s Bridal, they sell fabric swatches in all different colors for $1.00 each. Its just a little 2″ square, but that all you need to be able to match colors.
