My sister made them 2 days ahead and because of the transport they were already minorly suffering (but still delicious). The cake she made, on the other hand, was still perfect!
I've heard that you can make them up to a week before...but I wouldn't trust it. I'm planning on doing mine the day before. If you do decide to make them further in advance, you can freeze them -- but obviously they'll need to be frozen UNDECORATED, and then defrosted and decorated on the day of.
FI showed me how you put bread in a closed container with cookies and it keeps them moist. I'm not sure how it works with cupcakes but it'd probably be worth a try
I like to keep cupcakes in my mouth. Other than that, I have one of those cupcake holder guys.
@50- i totally agree. I was going to say at my house to keep cupcakes you have to HIDE them (from me)
You can make cupcakes up to a month in advance actually (but its NOT ideal)-- as long as you individually wrap them with plastic wrap! You have to make sure they are tightly wrapped or else when they dethaw they will be really, really dry & gross.
If you make cupcakes a day or two before, you can store the cupcakes in an airtight container at room temperature :) Don't refrigerate them... ick!
I suggest day or two before. In my experience the cupcakes which are made with oil (vs. butter) they tend to stay a bit more moist.

Why don't you make the batter and freeze it, than make the cupcakes closer to the day.

i'm just curious...i see postings and articles about people who make their own cupcakes to share at their wedding.
i don't think we're going to do this (we want a cake), but does anyone know how long in advance you can make them and they still taste fresh? i'm just incredibly curious. how do you even package them to stay fresh? do they need to be frozen and then iced the day before?
