So, we met with a potential caterer the other night and I’m just kind of lost. It’s a restaurant that we really like so they aren’t a standard “wedding food” kind of place. I know we want a buffet so we want food that will work well in that setting, but other than that, I don’t know where to start. She is preparing a quote based on – chicken empanadas (we have had them at a wine dinner at her restaurant and they were transformative), caesar salad, “pasta dish” and “maybe steak tips.” She’ll make pretty much whatever we want, which is kind of overwhelming. I know we need at least one vegetarian/vegan dish, so I figured the pasta would work for that, but what else have people had in their buffets that was a hit?

@HannahGrace: For our buffet we’re having salad, carrots, mashed potatoes, a vegetarian pasta dish, a chicken dish, and a beef dish. I want one of these transformative empanadas, sounds amazing 🙂

@jennmariee: Haha, they are amazing! I was like, ok sure I’ll try an empanadas and then I turned into a crazy person: must eat as many empanadas as possible! I hope that even my less adventurous family members will like them. Your menu is making me think we probably should have a vegetable too, so thank you!

Italian Style Wedding
Breadsticks [a basket at every table]
3 cheese pizza [this is mainly for fi, but we will have a few available for anyone who wants some]
Twice Baked Lasagna
Penne with Creamy Basil Chicken
We may nix 1 side and 1 entree as we are having a cocktail hour before dinner.

@jenilynevette: Yum, that sounds great! We joke about just having really good pizza… because, you know, who doesn’t like pizza? So I think that’s a great choice for a side.

@HannahGrace: Lol, we were going to get him a pizza grooms cake.. he just loves pizza! So I decided i’d get him a grooms “pie” [pizza!]. And I figured, well I should just add it to the menu then. He’s happy so that’s all that matters!

@jenilynevette: That’s awesome! My fiance has had few very opinions… I would prefer cupcakes but he wants a cake so i was like, “done!” If he wants a cake, we can have a cake. He also liked the sound of steak tips which is why that’s one of the few somewhat concrete items on our menu.
