I would put it on the website as a “A non-hosted bar will be available”

I agree with everyone…go for the website and let everyone else take it from there!  That’s really all you can do…there’s no appropriate way to put it in the invitation or anything, IMO.

website; I put “Please note: there will be alcohol available for purchase starting directly after the ceremony & again after dinner.” (we’re providing wine with dinner so that’s why I said closed during).

I think you should put it on the website and make certain – either through email, or calling ppl that all guests are aware of this.  I never take money to a reception and rarely read ppls websites so I would be annoyed if I arrived at a reception with a cash bar unawares
