I would begin calling. I think it can get complicated if you start asking vendors to extend time, although perhaps others have done that successfully. If your RSVP deadline has passed then you are well within the proper time to start calling people.

after the rsvp deadline, you can and should do follow ups as soon as you can.  deadlines are deadlines for a reason.

I would just start calling now.  I don’t think waiting an extra week will bring in too many stragglers.
