I LOVE "How Great Thou Art"! We included it as part of our ceremony. Not only is it a beautiful hymn, it also bears personal significance to my family. But I think it would be a great option for you and your FI to consider.
Two of my favorites are Joyful, Joyful, We Adore You and Be Thou My Vision... You might want to check in with a grandparent or parent, because you might discover they have a favorite that you could use as well!
I'm going to do our ceremony program post reeeeeal soon. We had a Catholic nuptial mass. Maybe some of the hymns we used will inspire you? 
Like Missbliss suggested, I love "Be Thou My Vision". It's such an old and beautiful hymn. I've considered using it in my wedding because it's one of my favorite hymns. Another hymn that might be good for a wedding is "All Things Bright and Beautiful" especially if you're interested in something that is more generally spiritual and isn't heavy on specific theological language. I think it's a beautiful hymn myself. Let us know what you pick. I love hymns!
I'm also Episcopalian. Our communion hymn is going to be "On Eagle's Wings." I know it's used in practically every wedding (and a lot of funerals) but I just love it!
Some of our hymns are Be thou my vision, the servant song (EXCELLENT for weddings and never used), and Set me as a Seal by Matt Maher (based on song of songs).
We did "Have Thine Own Way Lord" for our hymn. It was just instrumental and played while we took communion and did our unity candle.

Also, you could use "We Will Serve the Lord". I LOVE this one, too!
Our organist recommended: Jesus, Come! For We Invite You. It was in the Lutheran hymnal. I'm a bit of a theology geek and really liked the words.
We used Praise to the Lord the Almighty in the service and then our Recessional was Joyful, Joyful -- it was so fun to walk out to really upbeat music and everyone singing.
I 4th "Be Thou My Vision" if I don't use that for one of the entrance/processionals we will probably use that as our hymn.
Oh my gosh, the servant song is gorgeous! I'd never heard it before, but it's perfect for our foot-washing ceremony. I totally agree about "Be Thou My Vision," and I also love "Come Thou Fount."
All of our music is going to be hymns (even what everybody is walking in to). Some of them we're using are:
-His Love Can Never Fail
-O the Deep Deep Love of Jesus
-Before the Throne of God Above (actually being sung by the congregation as worship instead of a unity candle or anything)
-O Love that Will Not Let Me Go
@jess - we had a friend sing that at our wedding - it is a beautiful hymn!
My bridesmaids walked down the aisle to "For the Beauty of the Earth" which isn't necessarily wedding-y but we sang this hymn at a friend's wedding and it's what the guests sing at Meg's wedding in the movie "Little Women."

Hi all,
I need some suggestions for a hymn. Can't seem to find the "perfect one". We're getting married in a Episcopal Cathedral. We're not super religious, but quite spiritual. Our ceremony requires at least one hymn.
