So I can pick 3 entrees from a list that the venue gave me. I want 1 option to be vegetarian, so then out of beef, chicken, fish, I can pick 2.
Is it totally strange not to have a chicken option for guests?
I think more people would choose chicken than fish, so I chose beef, chicken, and vegetarian.
Do you know what dishes would be served for each option? I would agree that more people would choose chicken over fish, but I think it would also depend on what the options are.
I would need to know how they would be prepared before I could choose. We are not having chicken or fish. We are having baby back ribs and cornish hens.
The fish options I'd choose from are seared atlantic salmon w/ chive puree and red onion confit, or pan seared sea bass w/ sweet pea puree.
The chicken option is sauteed chicken medallions w/ wild mushrooms.

mmm....those are tough choices.
My first thought is to go with the salmon just because I think more people like salmon than sea bass and my reason for not picking chicken is that when I think of wedding food, chicken is what comes to mind, and for me, I don't want to be like everyone else. Also, wedding chicken can sometimes be tough.
I definitely vote no chicken. That's what everyone serves! I say beef or fish all the way.
I think @kr13is had the ideal menu!
There are a lot of people who don't eat beef who may or may not eat fish. I think you have a better chance of having happy guests with the chicken option.
We had the same choice of 3 entrees. We went with a beef dish, chicken dish, and vegetarian pasta dish. I think you'll get more people wanting chicken over fish.
I voted chicken, but after you listed the options I personally would prefer the fish choices (I hate mushrooms!)
PS. Another reason I vote salmon- it is classier, IMO. People eat chicken all the time. I also think of chicken as a budget option.
I went for fish. I think that you're risking a bit more with chicken, because IMO it's harder to mess up making a fish meal than a chicken one. I think it's a little more special (and neater/easier to eat) because it's not an every day food. That being said, if you have lots of children at your reception, for example, you may prefer to do chicken b/c so few kids actually like fish! Just a few thoughts :)
I voted fish. Normally I love chicken (I hardly eat beef etc) but after reading how it would be prepared, I think I would be more likely to eat the fish (I don't eat salmon, but the others sound fine). Something about "medallions" has never appealed to me, and when added to mushrooms, I know I wouldn't eat it. Plus, like everyone else has said, everybody has chicken.
I look at it like Steak is a heavy option, chicken kinda medium, and fish and veg are both light. So in order to balance the menu out I would do Steak, Chicken and Veg.
i would say fish, chicken and vegy. i am surprised that is not an option...
not many ppl eat red meat these days...
I'm allergic to fish and not a huge fan of vegetarian options. I don't really like to eat red meat. Although considered "not unique," I would prefer a chicken option.
LOL I would go hungry either way bc I hate mushrooms but don't eat fish or beef. And usually veg options include mushrooms or bell peppers (both of which I don't like)
I know quite a lot of people dislike (or hate) mushrooms, so I wouldn't opt for the chicken dish - and like others said, chicken at weddings tends to be dry and tough because it can be easily overcooked.
Of the fish, people tend to like salmon more than sea bass, plus, the chive puree and red onion confit sounds delicious.
I would vote for fish anyway, but the salmon w/ chive & red onion confit sold me!! YUM!! :)
Down with mushrooms!
well i would have said chicken but after you listed the difference i COULDNT choose that cuz im allergic to mushrooms - and i cant choose fish because im allergic to seafood LOL
so my suggestion is no matter which one you get - have the meat as plain as possible - no mushrooms!!!! if they did the chicken without mushrooms i would be all about chicken. there are alot of folks who dont like mushrooms....
Personally, I _love_ the way the salmon sounds, and I hate mushrooms, but I still voted for the chicken option (although I agree that you should see if theres a non-mushroom chicken option). I know chicken is kind of a wedding cliche, but there's a reason - it's a crowd pleaser. I know a lot of people that avoid red meat, and I know a lot of people that don't care for fish or are avoiding it (maybe pregnant guests). If you're avoiding the chicken because it seems "budget" or "expected" then can you talk to them about jazzing it up? We're doing a pomegranate lacquered chicken with a sweet onion polenta and it is to die for!
I was facing a similar decision with our menu -
My caterer told me beef and chicken are the swappable ones - so you pick one or the other, not both.
I personally think more people like beef over chicken, and I think chicken gets a bad rap at weddings in general (ever heard it referred to as rubber wedding chicken?) - but I didn't like any of the beef dishes I tasted from the caterer and opted for chicken. (So, ours is chicken/fish/veg).
I have been debating this same thing for months! I think I've finally been swayed to go with chicken though. I really wanted fish, because I think chicken seems far too typical and potentially looks "cheap" (even though, in reality, it costs the same as the fish at our venue). But The Guy and several others have convinced me to go with the chicken for the following reasons: many people don't eat fish; fish cooked on a large scale is often overdone and dried out; we'll offer a fish option at the rehearsal dinner.
So, chicken it is for us (the other two options are filet mignon and vegetarian risotto).

I would rather put beef, chicken, and fish on the menu and let that one vegetarian tell me the have "special dietary restrictions" and let the caterer do something different for that one dish.
But if you definitely want that vegetarian option, I think I would go for beef and fish.

One other note: if you have a vegan at your wedding your vegetarian option might not actually be suitable. Even if they do a vegetable soup and it's stock is chicken or beef-based, a vegan can't eat that. A vegan can't even eat a regular pasta dish, because pasta is made with eggs. Just a thought!

@vaness - I want to include a vegetarian option because there are several "real" vegetarians attending including my dad - so I want to make sure the veg food is actually something good and not just something random the caterer throws together at the last minute. And so they can check a real meal on the response card like a normal guest.
I think I'm leaning more towards going the beef/salmon/veg route - but I'll see what our families think.
Personally, FI and I would probably choose fish because we love it but I don't think it's as popular as chicken. So because of that I chose the beef, chicken, vegetarian option.
Although I would prefer the fish, I agree that you are going to likely please more people with the chicken.
I agree with the posters who have said that chicken at weddings is overdone. I think that fish is gaining popularity, and salmon is especially well-liked, probably because it's not as "fishy" or "slimy" as some other fish can be.
Have you had a tasting of these entrees? I think that would help you decide.
A month ago I would have said chicken, but after getting my RSVPs back, I'd suggest fish. Our guests are mainly from Wisconsin, not necessarily the most adventurous eaters, and salmon is our most popular entree request. Out of 100 people who've replied so far, 43 have chosen salmon while only 5 requested chicken.
I voted beef, chicken, and vegetarian. I know many people who are not vegetarians but they do not eat red meat, and I think chicken has a greater general appeal than fish.
I did beef, pork, and chicken. No veggetarian, but only cuz I knew no vegetarians were coming. I woulda done fish, b/c I love fish, but my venue only offered mahi-mahi and swordfish--both of which, I dislike.
