Congrats on reaching the 2 year mark! I've never heard of a unity knot.
Unity knots are a Celtic tradition. The knot is intertwined has no beginning or end. It represents the eternal committment that you share with each other. I think they are beautiful! The knot structure itself also symbolizes the strength of your bond, becuase they are hard to break and unravel!

I was just on my local CL looking for Vera Wang gowns, and two champagne flutes came up with silver unity knots on them!

Our 2 year dating anniversary is on Thanksgiving, so we exchanged gifts today. MY Fi got me a necklace with a unity knot (has anyone heard of this? is there a story?) to match me e-ring. Awwww!
