Honestly...
Those dresses are gorgeous!! Could you trust yourself to make sure you exercise every day the month before the wedding and have some backup spanx or even a corset? Then, just buy in your (reasonable) smallest/mid-smallest fluctuating size.
Check the La Sposa website. I tried on one similar to what you are looking for with the lace up back. I have no idea what the style name is though. Good luck with your search.

most of the ones i've seen usually come with a zip or even if they have lace up back its not a real corset, so it doesnt really allow you that much room. Is it possible to by the gown one size larger and then have it altered close to the wedding date, cos to be honest i think the zip ups look better with this style

Although honestly, I agree with the above post. Get some great undergarments and you won't miss the lace-up back. I was planning on putting a lace-up back in my gown and when I went in for my 1st fitting it fit great with the spanx and longline bra. I think the back of my gown would have looked too busy with the lace-up instead of the zipper. Not every gown can pull it off.

what about having one custom made? Take the pictures to a seamstress and tell her what you want. She should be able to give you an estimate on cost of materials and making it.
This can also be cheaper than buying one.... sometimes, but not all the time... besides, never hurts to ask for an estimate, especially if you explain you have a budget and want to know if it can be done for that amount.

The challenge is: are you shopping in NZ? If so you won't be able to try on any of these before ordering, unless you pop over to Sydney (where Abbey Bridal has a very impressive selection of Maggie dresses).
Thanks for all the advice guys, so much appreciated, I'm going to keep hunting for a laceup-lace gown with V neck, but maybe it just doesn't really exist, one of those things in a time of strapless huh?
@Sweetrose, good idea but I really don't think the seamstress around here is that skilled, plus it'd be so hard to find matching colours etc....thanks though!
@Huckleberry, such a good idea but my problem is that my size is a really strange one, my bust is a 32DD but my waist is 26-27inch, and my hips are, well let's not even get into how big they are! But my point is I have a really strange ratio and as a result it's really hard getting dresses to fit me without a lace up or big alterations, and I'm getting married just after Christmas so no one will be able to alter it around that time, therefore I have to pick a dress and get it altered around 3 months before the wedding....tricky.
@Melly, I love La sposa and pronovias in general but they never seem to marry lace up to the look I'm after.
@Bells, I think you're right I just don't trust myself to get it spot on, my body seems to have a mind of its own. Also, I'm thinking of the Essence of Australia style lace up backs which are authentic lace ups and do allow for room to move.

@Ryna, great idea but seamstresses over here are crazy expensive, like way more than the price of a pronovias all up for example.
@Snuggly, seriously? I didn't know that, I thought Astra carried Sottero? Although last time I was in there the samples were so so so dated.
I have just about the same measurements as you and bought a dress that didn't have a lace-up back, despite wanting one, because alterations would be expensive. So I had them install a corset into the back of the dress and it wasn't too much $. Could that be an option?
@wellykiwi: Astra is the only Maggie Sottero stockist in NZ, and they only carry a few! Check their website for the complete listing. You can order all the other dresses through them but you have to pay for them first - unfortunately you can't order anything just to try on. It's difficult living in a small country!
Ooooooh! This Essense dress is available with a lace up back! Seems to match all your criteria... (The picture has a zip but the website says lace up is available too.)

Have a look at Ella 5306 - it has a peekabo back but might meet your requirements - it's also available at Brides on Thorndon in Wellington according to their website :-)

We carry allure bridals in our store and I'm not sure where or if you have asked anyone about Allure, but they are 100% custom, if you like the lace off one dress and the style of another they can put it on that dress. We have had 3 dress combined into one before

I've been hunting for over a year and just can't find anything like what I'm after, which is, all over lace/embroidered organza, V neck, both front and back, a cut that does come in at the hips, like the Allure, but not mermaid, and lastly, but so importantly (because my weight really does fluctuate), a lace up back. I've attached two pics of the look I'm after, but it's always a zip up back and the alteration from that to lace up is deemed too risky. What do you guys think, have you seen something like this in a lace up back?
