I haven’t tried too many recipes, but I love her stuffed sweet potatoes!  It’s one of my go-to meals when I’m short on time and ingredients.  I’ve also fallen in love with spaghetti squash, thanks to her!

@littlemisst08:  Ok, in my experience, Skinnytaste either nails it or fails miserably with recipes (and that Gina is so sneaky about it, she acts like everything she makes is delicious – LIES).

@littlemisst08:  I’ve never actually been to her blog, but I hear you on browsing for hours on food blogs though…  My blog of choice is Simply Recipes.

I generally start with any recipe that doesn’t require me to make a special stop at the grocery store.

I’ve made a bunch of Gina’s recipes and have enjoyed most. The Sicilian Rice Ball Casserole is fantastic. We also like the baked cheesy spaghetti squash, her bolognese, crockpot applesauce, turkey piccadillo, “Mom’s Spanish rice and chicken”, baked zucchini sticks, and I like her quinoa and spinach patties. I don’t have a huge sweet tooth so I haven’t tried many of the desserts.

I made her Buffalo Stuffed Chicken tonight. Yummy. I had the Spaghetti squash and Cheese last night. SO amazing. I cook almost exclusively form her site. I love how she has some many healthy comfort foods and doesn’t use artifical sweetneres. You should also check out http://chocolatecoveredkatie.com  It’s a healthy dessert blog and I could spend hours on there as well.

I love the chicken enchilada zucchini boats, the crock-pot honey sesame chicken (i think that’s what it’s called). If you want to bake, her blueberry buttermilk cake is AWESOME. Also like the cajun chicken pasta.

Those are my fav. I think the only things I haven’t liked from her blog are the soups–none of them have been as awesome as I wanted them to be.

ooooh ladies, that Stuffed Cabbage Casseraole sounds delicious (my mouth is watering having read the recipe)

And a heck of a lot easier than the long process of making Stuffed Cabbage Rolls

I may have to just try this.
